Matsutake - Tricholoma murrillianum

Matsutakes are a beloved mushroom for their distinct taste and aroma. The name literally means “pine mushroom,” (matsu = pine + take = mushroom). They are aptly named as they are most often found in direct association with specific pine trees of a particular age. Fresh matsutake are great to cook with as they are very firm and keep their shape even when sliced or chopped. Their flavor is known for being pine-like, aromatic with notes of cinnamon and earth.
